Italian Broiled Salmon

The aromatic salmon is as beautiful to look at, as it is to eat. It's low in fat, with only 8 grams per serving, and is quick to prepare: 10 minutes advance work and 12 minutes in the oven.

Heat broiler. Spray broiler pain with no-stick cooking spray.

Cut 1 lemon into 6 slices. Place salmon and lemon slices on prepared pan, skin-side up. Boil 5 inches from heat, turning once, until fish flakes with a fork (12 - 13 minutes).

Meanwhile, grate the peels of the remaining 2 lemons to make about 4 teaspoons of zest. Squeeze the lemons and reserve the juice.

Combine lemon peel and parsley in a small bowl.

Melt butter in a 10-inch skillet until sizzling; add garlic. Cook over medium-high heat for 2 minutes. Add 2 tablespoons of lemon peel mixture and beans. Continue cooking until heated through, 4 - 5 minutes.

To serve, place fish, lemons and bean mixture on serving plate; sprinkle with lemon peel and parsley. Drizzle with reserved lemon juice. Makes 4 servings.


Omelet Recipe

Remove the boredom and tastelessness from the usual egg-white breakfast with this tasty twist!

Ingredients:

5 egg whites (include 1 yolk)
2 strips of lean bacon (browned and cut into bite size pieces)
4 olives (sliced) or try Kalamata olives for more flavor
1/2 an ounce of feta cheese
3 thin slices of avocado
1 slice of roma tomato (diced)

Instructions:

Scramble the egg whites and yolk and pour into a good non-stick omelet pan. After one side is done, flip the omelet completely over (this requires some practice due to the size of the omelet). Spread the ingredients on 1/2 of the omelet. When the bottom is cooked, fold the omelet in half and serve.

I use feta cheese because a little bit goes a long way for flavor. If you are not a feta fan, you can change to a reduced fat cheddar or mozzarella. Kalamata olives are the best, but difficult to find at some grocery stores. Usually the deli or gourmet food section will be the place to look.

A quick and painless way to cook bacon is to use the microwave. Place several napkins or paper towels on a paper plate. Put the bacon strips on top of the napkins and cover with several more napkins and another paper plate. Microwave the whole apparatus for 2 - 3 minutes until bacon is crisp. Remove the bacon and throw the mess (and fat) away!
